With over 20 years of grilling, bbq and smoking experience, Paul has soaked up information and techniques of many different styles. His smoker is custom made from the heart of Texas. It's a quarter inch thick steel, reverse flow which ensures even cooking temperature and sealed in flavor. He is a trained food handler and takes every precaution to ensure a safe smoking/food experience.
